Healthy Bites: Spiced Apricot Bliss Balls

Apricots are one of the most delicious fruits in the summer. They are sweet, full of nutrients and fiber. And they make an excellent snack food because, unlike other fruits, apricots do not spoil quickly.

I place everything in a food processor to get the right consistency then roll it into balls. I have been loving this kitchen tool lately because it is small and easy to clean.

When they’re turned into balls, they make a perfect healthy snack for munching on while you’re out and about!

These apricot bliss balls are made with honey, oats, coconut oil, chia seeds, and cinnamon to give them an extra little bit of sweetness. They only take 15 minutes to prepare so get ready to stock up your freezer with these tasty treats!

Apricot Bliss Balls are also great for kids! The ingredients can be mixed by hand at the beginning. Just make sure you mix them well enough that all the oats are stuck together with honey and oil. Ingredients

– ½ cup oats (gluten-free if preferred)

– ¼ cup coconut oil, melted

– ½ tsp ground cinnamon

– Pinch of salt

– ¼ cup honey or maple syrup

– ½ cup Nature’s Garden Dried Apricots, roughly chopped

– ¼ cup chia seeds

Instructions

  • Add the oats into a food processor and blitz for 30 seconds or until they have broken down.
  • Then add in all the remaining ingredients except for the honey, apricots, and chia seeds.
  • Blend again until everything is well combined then transfer to a bowl.
  • Finally, stir through the honey followed by the apricot chunks and chia seeds before rolling them into balls with your hands!

Store these bliss balls in an airtight container at room temperature where they should keep fresh for up to two weeks – if you can resist them that long!

These make great lunchbox snacks as well as healthy treats after dinner so why not mix a batch together and see what you think!
