Pan Seared Salmon with Chickpea Puree and Mediterranean Salad with Cucumber-Dill Yogurt Sauce

Pan Seared Salmon Ingredients:

4 6 oz pieces of salmon 


Lightly season with salt and pepper and pan sear or grill.

Mediterranean Salad Ingredients:

1/2 cucumber small dice

1 red bell pepper small dice

1/2 red onion small dice

1 Roma tomato small dice

1/8 cup red wine vinegar

juice of one lemon

1/4 cup olive oil

1/4 cup chopped parsley

salt and pepper to taste
