The Farm to Family food truck is a tale of resourceful ingenuity, pie-in-the-sky ideals and the American Dream.

It’s also a tale of overcoming economic mountains to provide for families in need. Farm to Family is changing the way the First Coast views food, and is giving the term “food truck” a whole new meaning.

Healthier choice:

Sandwich your burger between two pieces of iceberg lettuce. It adds a great crunch and is virtually calorie free.

It’s hot in Florida. It was back when we were kids, too. Back when Mom sent us outside to play every afternoon unless it was storming. On really hot days, my mom would pass out ice pops ... a red one if you were first in line, green if you were last.

Pan Seared Salmon with Chickpea Puree and Mediterranean Salad with Cucumber-Dill Yogurt Sauce

Pan Seared Salmon Ingredients:

4 6 oz pieces of salmon 

Directions:

Lightly season with salt and pepper and pan sear or grill.

Mediterranean Salad Ingredients:

1/2 cucumber small dice

1 red bell pepper small dice

1/2 red onion small dice

1 Roma tomato small dice

1/8 cup red wine vinegar

juice of one lemon

1/4 cup olive oil

1/4 cup chopped parsley

salt and pepper to taste

Why this is a not so good choice: Corn chips are very high in sodium, and work fine as a small salty snack, but not as a main course, while cheese dip is traditionally higher in fat than cheese.

The side effects of maximizing calorie expenditure while improving fitness are an added bonus.
